This olive oil "Virgen of extra" from the co-operative of Competa has an acid degree of only 0.21% and marks in smell and taste from 5.6 to an official Spanish scale to 9.
It comes for the breakfast on toasted bread, to crisp salad, about roasted vegetables like courgette, paprika, tomato or aubergine.
The Axarquía is not influenced by the wide mass production in olives yet. The olive farmers from Competa own small plantations in olive trees of few hectare whose yield is possibly from 4,000 to 5,000 kilos of olives per season.
